Excited for Food FINALLY!


Since sometime around my 1st brain tumor I became lactose intolerant. Somehow since then, I’ve become lactose tolerant. I recently was curious, so I made one of my smoothies with normal yogurt. I didn’t have a  bad reaction.

So when I got the milk with my food delivery (for being poor and disabled) I decided to keep my milk & try it, instead of giving it to a neighbor. Shockingly I still didn’t have any bad side effects. This means that I can make a whole bunch more food in  my Ninja Foodi (affiliate link) since I can now use light/heavy cream and half and half.

I also got a mandolin and a dear friend got me a good food processor, in order to make it possible for me to try even more meals. Wondering why I would NEED those things to make cooking possible? I’m disabled from brain tumors/cancer/treatment and really bad fibromyalgia. So it’s critical to reserve as many spoons (energy) as possible.

It just makes me so bloody excited because I have been very limited on what I could eat the past few years, especially the past year since doing chemo treatment because the chemo made some foods become repulsive to me and even cause my belly to get queasy if I tried to eat them.

So yea, I’m now super excited to try new to me foods, since there are now a crazy amount more of options! Want to see what I’ve made? Check out the recipes I’ve posted here. Anything I post will be easy to SUPER easy to make because I just don’t have the spoons to make anything that requires much effort.
