Pressure Cooker Garlic Chicken and Bacon Pasta Recipe

 

I use my Ninja Foodi (affiliate link) for this pressure cooker garlic chicken and bacon recipe. However you could use any pressure cooker, as long as it has the sear/saute function.

This recipe isn’t as easy as some of the other Foodi recipes I’ve posted and it’s still easy enough that I could make it! Also yeasy and yummy enough that I will be making it again.

Ingredients:
- 4 strips bacon, cut into apx 1 inch pieces
- 1 chicken breast (apx .5 lb) cut into bite size pieces - or use 1 lb and a bit more seasonings.
- 1 tsp dried basil or parsley
- 1/4 tsp sea salt (omit if using salted butter)
- 1 tbsp unsalted butter
- 2 tsp minced garlic (3-4 cloves)
- 1 c chicken broth
- 1.5 c water
- 8 oz pasta - I used rotini
 - 1/2 c half and half
- 1/2 c Parmesan cheese, plus a little more for serving, if you want

Directions:
1. Preheat foodi on high on sauté and then cook bacon for about 5 minutes, until crispy, stirring frequently. Then use a slotted spoon to transfer the bacon to a paper towel covered plate.
2. Season the chicken with the spices (mixed together).
3. Add butter, chicken and garlic to your pot and sauté for 2 minutes or so, until the chicken starts to brown and the garlic smells yummier.
4. Add chicken broth, water and pasta. Push pasta down and don’t stir.
5. Pressure cook on high (set to seal) for 3 minutes. Allow to naturally release for 2 mintues and then quick release.
6. Add half and half, cheese and bacon. Stir constantly to thicken the sauce and melt the cheese.
7. Serve. I mean if you want to eat it from the pot that’s fine too, just don’t burn yourself! Top with more Parmesan cheese if you would like.
8. Don’t fight your cat if they want to enjoy some too.
